Straightforward aromatics of Cabernet; briary fruit (blackberries, raspberries) with a touch of oak. Medium weight palate with good fruit depth and notes of sage. The finish is long with hints of black cherries. Aged 25 months in a mix of French and American oak. Bottled Oct 07. If you can wait, lay it down for another 6 months before enjoying it.
Our 2007 Cabernet Sauvignon is grown in the one acre vineyard just down the hill from the tasting room. Always a pet project, the 2007 expresses all that we work toward in the parcel. A deep garnet color, elegant notes of cherry, mint and a snich of vanilla introduce a balanced and layered palate. Full bodied but friendly. Truly one of our Flagship bottlings.
