VINO
Our goal is to make wine in the traditional Italian style. We do not create aggressive, overpowering wines, but rather varietals that are smooth, well balanced, and compliment any dish. When I reflect on the true essence of wine, I remember growing up in Avio where wine was enjoyed with friends and family, and was a true source of pride and tradition throughout the Ottaviani family. This is what our wine embodies; tradition, pride, and family. Great wines are first made in the vineyard. We use old world processes which were passed down from generation to generation, and we do everything by hand. We farm to low yields and allow the grapes to show their unique character by doing as little as possible to hinder their way into becoming smooth, full-bodied varietals.

Our 2007 Cabernet Sauvignon is grown in the one acre vineyard just down the hill from the tasting room. Always a pet project, the 2007 expresses all that we work toward in the parcel. A deep garnet color, elegant notes of cherry, mint and a snich of vanilla introduce a balanced and layered palate. Full bodied but friendly. Truly one of our Flagship bottlings.

Estate Grown. This wine was made using traditional European methods. Soft on the pallet and easy to drink, a hint of sweetness adds to the finish. Crisp, green apple notes along with a fruity bouquet makes this a delicate wine which pairs nicely with salads, fish, or your favorite fruit/cheese platter.

Estate Grown. This Gold Metal Winner is truly something special...Aromas of watermelon, cherry jolly rancher, honeysuckle, and a hint of mint - the aromas of the best picnic you ever went on as a kid - great viscosity on the palate with flavors of cherry, fig, and honey. Slightly spicy and plenty refreshing on the finish with notes of sweet tea, kiwi, and spiced peach cobbler. This is a great warm weather wine, so pick some up while its still in stock!

Estate Grown. Vibrant in the glass, the color is but the calling card of our most elegant zinfandel. The fragrant frame of French oak is filled in by an aromatic panorama of flowers, coffee and black cherry ice cream. On the palate Absolution exhibits soft, mature tannins, fresh late summer fruit and a hint of mint. The finish is firm and resilient. Brilliant on any dinner table, a few bottles tucked away are a sure investment in future drinking pleasure.

Aromas of chocolate, pine, and wet earth in introduce a luxuriously soft, sweet, and dense combination of flavors. The finish is silk and berries. Confession is ALL CAPS – big, rich, round and “you’ve got to be kidding me” good!
